Gingerbread Cookies

Ingredients

3 cups all-purpose flour

2 teaspoons ground cinnamon

2 teaspoons ground ginger

1/2 teaspoon baking soda

Pinch of ground cloves

1 cup butter (soft)

1 cup brown sugar

1/2 cup molasses

Directions

Preheat oven to 350 F. Lightly grease 1 or 2 larger cookie sheets. Measure flour, cinnamon, ginger, baking soda, and cloves into a medium- size bowl. Stir with a fork until very well combined. Set aside.

In a large bowl, beat butter with sugar until very creamy. Gradually add molasses and beat until well blended. then stir in flour mixture until well mixed.

Gather dough into a ball, then roll out about 1/4 in thick on a lightly floured surface. Lightly dip cookie cutters into flour and cut out dough. Using a spatula, carefully lift cutouts onto prepared cookie sheets, placing them at least two in apart.

Bake in centre of preheated oven for 8-10 min. or just until set. Remove cookies to a wire rack to cool. About 4 doz., 2 in cookies.
